What You Need (the recipe is below):

All you really need for this recipe is a food processor or high powered blender. It’s very easy to make, and you likely have most of the ingredients on hand! The key to this paleo cookie dough recipe is making sure you use the right kind of sweetener. You will need a paleo and low carb sticky sweetener to bind the dough together, like this one. If you don’t care about the carb count, you can use any liquid sticky sweetener, such as maple syrup, agave nectar, or similar.

Also, you are going to need paleo protein powder (and vegan to keep the recipe plant based). I use Plant Fusion pea protein (vanilla bean); with only 4g of net carbs. It’s a bit controversial whether or not this protein powder is paleo, so it’s best to find one that fits your dietary needs. If the recipe needs to be paleo but not vegan, you can try using this protein powder.

Paleo Cookie Dough (Gluten Free, Edible, No Bake, Egg-Free, Vegan)

Try this delicious and edible paleo cookie dough that is rich, decadent, and loaded with protein and healthy fats. It takes just 5 minutes and 5 ingredients to make, and tastes JUST like the real thing, but it's low carb, gluten free, healthy, and good for you!

Ingredients

  • 1 cup cashews
  • 2 Tbsp coconut flour
  • 2 Tbsp plant-based protein powder
  • 4 Tbsp low carb sweetener sticky
  • 1/4 cup cacao nibs

Instructions

  1. Mix cashews and coconut flour together in a food processor or high powered blender.

  2. Transfer mixture to bowl. Add protein powder and mix until smooth.

  3. Mix the syrup in with your hands.

  4. Fold in the cacao nibs.

  5. Wet hands. Roll into small cookie scoop sized balls with hands. Store covered at room temperature for 3 days or for 7 days in refrigerator (if they last that long)!

  6. For Easter, press the dough into egg shaped molds and coat them with melted chocolate!
