Wait, what?

You said there’s only TWO ingredients in this protein cookie dough? That’s right! Just 2 ingredients, and in less than 5 minutes, you will have a delectable and rich, smooth, creamy, healthy cookie dough to nom on! Nom nom nom. It’s top 8 allergen free, which means nut free, dairy free, gluten free, soy free, egg free, and obviously fish free!

Protein Cookie Dough – the story

A little about me…and why I am so obsessed with protein balls, egg-free cookie dough, batter, etc. Growing up, I wasn’t allowed to eat raw cookie dough. I know, I was a deprived child. My mother was worried I’d get salmonella and die, or something like that. My loss is your gain. Also, my husband WAS allowed to eat raw cookie dough, but he has a cast iron stomach, and he can eat anything without getting sick. He is not the biggest fan of my “no licking the bowl” rule, so I have adapted the way I cook and bake to use other products. Because of this, and the fact I’m lactose intolerant, many of my baking recipes are vegan.

I mentioned this recipe is called galaxy protein cookie dough. There seems to be an abundance of “galaxy” themed food on Instagram…galaxy cakes, smoothies, etc. To be honest with you, after I made the cookie dough, it looked…well…rather unsightly. There was no way I was putting a picture of THAT online. So, I looked in the cabinet for sprinkles, and these were the only ones I had. They reminded me of galaxy colors, hence the name.

The Details

The key to this recipe is making sure you use the right kind of ingredients. You are going to need medjool dates, pits removed. If you are lazy like me and buy the pitted dates (non medjool), this is actually going to be more work for you, because you have to re-hydrate them for 30 minutes to one hour before you can use them. You might be able to try other dried fruits, such as raisins, prunes, figs. Disclaimer: use at your own risk, but I would love to know if it works out. Process them in a food blender until they make a paste. Then, add the next ingredient.

Also, you are going to need plant-based protein powder. I use this pea protein (vanilla bean) and it turned out lovely. This would make a vanilla flavored galaxy cookie dough. If you want chocolate flavored, use chocolate protein powder. They make chocolate, raspberry, vanilla, and cookies n creme flavors. If you want chocolate but only have vanilla powder, your recipe is going to be 3 ingredients (sorry)! Simply add a bit of dark cocoa powder to make this chocolate. You could also add 1 tsp of orange zest for orange flavored, or combine both chocolate and orange, or use coffee grinds (unused) and chocolate to make mocha. Really, it’s a versatile recipe. Be creative. Get nuts!

For the “galaxy” look, roll it in sprinkles!

Ingredients

  • 6 pieces medjool dates or re-hydrated dates pitted
  • 2 Tbsp plant-based protein powder

Instructions

  1. Blend dates in a food processor or blender until you get a fine paste.

  2. Add plant-based protein powder to the blender and mix.

  3. For chocolate, mix in 1 tsp dark cocoa powder (if not using chocolate protein powder). For more texture, add 1 Tbsp cacao nibs, chia seeds, sprinkles. For orange, add 1 tsp orange zest. Be creative!

  4. Remove from food processor and roll into one big ball, or into 2 smaller balls. Store covered in the refrigerator.
