Growing up, I remember the smell of sweet baked goods wafting through Grandma’s house. She was a master baker, highly skilled in her craft, and she managed to run a cake making business (she also made cobbler and other yummy treats), in addition to simultaneously raising four children. Her forte was making wedding cakes, and my absolute favorite, her super secret frosting recipe, was to die for. All I can say about that is the frosting has a massive amount of powdered sugar in it. We had to be especially careful with the mixer, so as not to coat ourselves and everything else in the kitchen with a fine dust of it.

I have been learning more and more about her after her passing in 2014, like the fact that she was gluten intolerant (like me) and also allergic to tomatoes (like me). Knowing this earlier in my life would have saved me from many tummy aches. Unfortunately for her, gluten intolerance was unheard of sixty years ago, and she persevered through it just like anyone else back in that time. Mom has carried on the tradition by modifying her original recipes to be gluten free. This gluten free version has been included below, so that you can enjoy it with your family! We typically enjoy this over the holidays, for Thanksgiving or Christmas, but you can make it anytime throughout the year.

Mom's Apple Cobbler

Grandma's "Our Daily Bread" Award Winning recipe for gluten free apple cobbler

Ingredients

Dough

  • 2 cups gluten free flour Bob's Red Mill 1 for 1
  • 1/2 tsp salt
  • 1/4 cup sugar
  • 1/3 cup shortening
  • 3/4 cup milk almond milk for dairy free

Sauce

  • 3 cups water
  • 1 cup sugar
  • 1 tbsp gluten free flour heaping
  • pats butter
  • sprinkle nutmeg

Instructions

Dough

  1. Mix flour, salt, baking powder, and sugar together.

  2. Beat eggs, add shortening, and mix well.

  3. Add eggs and shortening to flour mixture.

  4. Add milk and mix until well blended.

  5. Spray a 13x9x2 inch pan with vegetable spray and put a 1 inch thick layer of sliced apples in pan.

  6. Pour 3/4 cup of sugar mixed with 2-3 tablespoons of gluten free flour over apples.

  7. Dot with pats of butter.

  8. Sprinkle nutmeg over fruit.

  9. Put dough over fruit.

  10. Bake at 350 degrees, 40 minutes, or until done (browned).

Sauce

  1. Boil water.

  2. Mix flour and sugar together; add to water, then add butter and nutmeg. 

  3. Boil until clear and done.

  4. Pour warm sauce over warm cobbler and enjoy.
